Did you mean to ask who was the original artist who composed the music in The Pianist? If that is the case then it is none other than Frederic Chopin. But if your question is "who performed it," then that depends upon which of the following you are refering to:

All of the Chopin compositions are performed by Janusz Olejniczak (in fact those are his hands shown performing throughout the movie).
The only exceptions to the above are:

1. Mazurka for piano No. 13 in A minor, Op. 17 -which was performed by Andrzej Szpilman, the son of the musician upon which the story is based.

2. The film score titled "Moving to the Ghetto Oct. 31, 1940" was composed by Wojciech Kilar, performed by The Warsaw Philharmonic National Orchestra of Poland with artist Hanna Wolczeska. it was conducted by Tadeusz Strugala.

Hope this helps.

I happened to stumble upon this forum and post and listened to the

CHOPIN Mazurka op.17 No. 4

 http://www.youtube.com/watch?v=XE4n0hx_2mQ

Which was quite interesting because, this is the kind of music I listen to while doing homework. And to be honest it reminds me of music that plays in the hotel I always stay at when on vacation to orlando.
